Thanks for the suggestion.

In general, configuring Squid so it doesn't set the header in the
first place seems preferable to removing it with Privoxy again.

Most users don't use additional proxies and having Privoxy look for
additional headers that aren't present is a bit wasteful so I'm not
sure if we should do this by default.

I intent to test the impact of the current default (pre-)settings on
the performance in the near future and will decide afterwards.

Either way we should probably mention the Via header in the
documentation as a header the user might want to remove or
look out for.
