To "stress test" the WolfSSL support you could try benchmarking
programs like I did in [0], however simply using Privoxy linked
to WolfSSL for a while would be useful as well.

You could also check [1].

Do you intend to use WolfSSL for the macOS packages in the future?
Using WolfSSL instead of mbedTLS make a lot of sense (to me),
but as macOS comes with OpenSSL in the base system it probably
makes sense to stick with it.
